Our Story
The Ugly Onion started with a simple idea: good food shouldn’t go to waste.
Founder Maxwell Buskey studied sustainable agriculture and spent time farming in Vermont, where he saw how many great vegetables were tossed aside just because they didn’t look perfect. Same flavor. Same quality. Just a little ugly.
That stuck.
Today, we build menus around real ingredients, often second vegetables, sourced from local farms. We cook outside, over fire, and feed people where they naturally gather: weddings, birthdays, graduations, and long-table celebrations of all kinds. It’s about good food and bringing people closer to their food and to each other.
